Strawberry Shortcake w/ Whole Grain Biscuit – RECIPE | This is a light, low-fat, low-sugar dessert that definitely hits the sweet spot! We made this recipe in my Kids in the Kitchen class, and it was a huge hit!
You only need about 20 minutes to make this stress-free recipe with your kids! You might need to allow a few extra minutes depending on the number of children you are working with and also their age/developmental level.
I can’t say enough about the benefits of cooking WITH your kiddos! Besides the skills they learn and the proof that kids who help prepare healthy foods are more open to EAT healthy foods… something I have seen EVERY time I teach a class is the PRIDE these kids feel when that recipe is completed, and they look at it and say, ‘Look what I MADE!!!’ Their smiling faces beam with pride. What a simple way to give your child the chance to feel such accomplishment!

I promise, no matter how ‘imperfect’ their creation looks, no matter how many spills or dishes there are to clean afterward, seeing their faces light up this way makes it ALL worth it.

- 3 c. sliced ripe strawberries washed & tops removed
- 2 tbsp. unsalted butter melted
- 1/3 c. lowfat milk 1% or 2%
- 1/2 tsp. vanilla
- 2 tbsp. honey divided
- 1 large egg beaten

- 1/2 c. real whipped cream prepared or homemade

- Preheat oven to 325 degrees. Line cookie sheet with parchment paper.
- In small bowl, combine sliced strawberries and 1 tbsp. of the honey. Stir gently to coat berries, refrigerate.
- In medium bowl, combine butter, milk, vanilla, remaining 1 tbsp. honey, and egg. Mix well. Add Whole Grain Baking Mix and stir to combine, being careful not to overmix.
- Divide batter into 4 equal parts (about 1/2 c. each) and drop onto prepared cookie sheet.
- Bake 8-10 minutes or until toothpick inserted in center of biscuit comes out clean. Remove biscuits from cookie sheet and cool on wire rack 5-10 minutes.
- Slice biscuits in half through center. Place each bottom half on a plate. Divide strawberries evenly between biscuit halves. Add biscuit tops, then spoon 2 tbsp. whipped cream onto tops of each.
- Enjoy!
