PANCAKE & BAKING MIX

With just a few minutes of prep, this convenient mix is ready for use in over 30 recipes, including pancakes, muffins, desserts, and more (get the cookbook on Amazon via the link above!). 

Your family won’t believe the Light ‘n Fluffy Pancakes are whole grain, and using this mix gives a whole new meaning to the term “quick bread”!

YIELD|  12 c. mix
PREP|  8-10 minutes
STORAGE| 
Airtight container at room temperature up to 3 months
(check expiration dates of ingredients prior to marking mix for ‘Use By’ date)

Ingredients
4 c. whole wheat flour
4 c. unbleached all-purpose flour
2 c. nonfat dry milk or clean unflavored whey protein (I use & recommend Naked Whey)
2 c. oat bran or wheat bran*
2 tsp. baking soda
2 tsp. baking powder

Directions
Combine all mix ingredients in large bowl.  Mix well with wire whisk to break up any lumps.  Store in airtight container as above.

SHOPPING TIPS
Nonfat dry milk is generally located on the lower shelves in the coffee/tea section. Save a ton of money by getting Naked Whey in bulk and use it for this plus smoothies!

Find oat bran in the hot cereal section at your grocery store, usually near the oatmeal and Cream of Wheat in a smaller box on the higher shelves. Or get this great deal here (about $5/ea).  These are shipped in individual airtight bags, so you don’t have to worry about bugs or other issues that can arise with prolonged storage:

*You can use wheat germ in place of the oat bran or wheat bran, but if you do this the mix needs to be stored in the refrigerator and recipes made with it will have a reduction in storage time.
