Light Chicken Salad
Sweet, savory, creamy and crunchy! This protein- and fiber-packed recipe delivers a rainbow of flavor & texture experience! Make this in less than 5 minutes using leftover baked or cooked chicken breast.

  1. In a medium bowl, combine all ingredients except chia seeds. Gently stir until all ingredients are combined.
  2. Serve chicken salad mixture on top of purple cabbage leaves, as shown (or see below for alternative serving suggestions).
  3. Sprinkle with chia seeds and serve.*

*Chia seeds need to be added just before serving to avoid having them ‘gel’ from prolonged moisture. 



  • Scoop into whole wheat pitas. 
  • Serve inside a whole grain tortilla or wrap. 
  • Serve as a topping for cucumber slices as a light snack or appetizer.
  • Spoon into emptied bell pepper halves or tomato halves.
  • Pile between slices of sprouted whole grain bread.
