(Marshmallow-free) Rice Krispy treats

There are days (OK, quite a few of them) when I NEED chocolate like I need air.  It’s non-negotiable.  Imagine my surprise and delight when I opened up the handy new Thin Kitchen Recipe Book, which was included in my P90X program, and found this heavenly, rich, decadent, chocolaty recipe that not only satisfies my cravings but I also feel OK about giving to my kiddos!

This definitely won’t be an everyday thing, but I love finding occasional treats that feel indulgent without going against my preference for steering clear of high-fructose corn syrup, loads of sugar, and unhealthy fats.  These took less time to make than it would take to get my kids in and out of their carseats for a trip to wherever to get a treat… and the best part – they’re even OK to have during my program (in which I’m losing fat and getting super toned!).

OK, I can’t keep it to myself any longer.  Try these – you and your kids will LOVE them!

Chocolate Crispies

Ingredients
3 c. crispy brown rice cereal (I used Rice Krispies because that’s what I had)
1/2 c. almond butter (I used natural peanut butter)
3/4 c. honey
1/2 c. dark chocolate chips
Canola oil spray (or nonstick vegetable oil cooking spray)

Rice Krispy treatsDirections
1. Coat a 9″ x 9″ square baking pan with nonstick cooking spray.

2.  Place peanut butter, honey, and chocolate chips in a large saucepan over medium heat.  Cook 4 minutes, stirring occasionally, or until ingredients are melted together.

3. Remove from heat and stir in cereal.  Press mixture into baking pan and cool 15 minutes (I put the pan in the refrigerator so they could set really well)

4.  Dip a sharp knife in hot water and slice evenly into 16 squares.
