Light Chicken Salad – Recipe

 

This is one of my favorite recipes for a couple of reasons.

First, it’s super versatile. There are so many different ways to serve this so it’s always delicious and never boring. Take a look at the Alternative Serving Suggestions below for ideas!

Second, it makes use of one of my best time-saving tips – batch cooking. I developed a Masterclass on this called

I also love to use purple cabbage as a ‘wrap’ for tacos and a variety of salads like this. It’s visually appealing – a strong contrast to the typical bland and boring ‘health foods’ we think of when initially upgrading our diets. It is much easier to be excited for healthy food when it LOOKS GOOD!

Honestly, this is much prettier than any grain-based shell or wrap. Whether you’re trying to cut calories or just want to include more nutrients in your meals, cabbage is a great alternative to these. 

The cabbage adds a nice crunch! It’s also much more sturdy than butter lettuce or green leaf lettuce, which are commonly used for these types of recipes.

Nutritionally, cabbage is also a great choice! It’s higher in dietary fiber (great for healthy digestion and helping our tummies feel fuller, longer) and vitamin C (immunity booster, heart disease fighter, healthy skin & metabolism supporter).

Light Chicken Salad

Instructions
  1. In a medium bowl, combine all ingredients except chia seeds. Gently stir until all ingredients are combined.
  2. Serve chicken salad mixture on top of purple cabbage leaves, as shown (or see below for alternative serving suggestions).
  3. Sprinkle with chia seeds and serve.*

*Chia seeds need to be added just before serving to avoid having them 'gel' from prolonged moisture. 

ALTERNATIVE SERVING SUGGESTIONS

 

  • Scoop into whole wheat pitas. 
  • Serve inside a whole grain tortilla or wrap. 
  • Serve as a topping for cucumber slices as a light snack or appetizer.
  • Spoon into emptied bell pepper halves or tomato halves.
  • Pile between slices of sprouted whole grain bread.
