Instructions
  1. Combine all ingredients in large food processor bowl. Pulse until finely chopped.

Store in refrigerator up to 5 days

OR

Batch & freeze as per these instructions.

Dip your veggies

Spread inside veggie wraps

MAKE IT (1 serving):
Spread 2 tbsp pesto (1 cube, defrosted) onto sundried tomato or spinach wrap

Top with 1 c. chopped veggies (spinach, sweet peppers, zucchini, any additional of your choice)

Wrap and enjoy!

Toss with veggies and brown rice

MAKE IT (1 serving):
Stir 2 tbsp pesto (1 cube, defrosted) into 1/2 c. cooked brown rice 

Add 1 c. chopped raw zucchini and 1/2 c. halved grape tomatoes

Stir and serve! 

Mix into pasta salad

MAKE IT (1 serving): 
Mix 2 tbsp pesto (1 cube, defrosted) into 1/2 c. cooked whole grain pasta

Stir in 1/2 c. chopped fresh spinach, 1/2 c. grape tomatoes, and 1 c. diced raw zucchini

Citrus Basil Salad Dressing

When I lived in Seattle quite a few years ago, I worked as a server at this amazing waterfront restaurant that served fresh-caught seafood and shellfish. It’s kind of funny how much food nostalgia I have for this place. I suppose because it was my first job at a high-end restaurant, my first time living in the city away from everyone I had known growing up, and I have a lot of fond memories of that time in my life – the first of a few giant steps (WAY outside my comfort zone) toward making a better life for myself.

Every time I smell fragrant Jasmine rice or rosemary bread, I am automatically taken back to my evenings working in that gorgeous restaurant with the city and Bell Harbor view. 

One of my favorite dishes was their chopped seafood salad, with Dungeness crab, bay shrimp, avocado, mango, spinach and greens, and a vibrant basil vinaigrette that made all of the other flavors pop with freshness.

Fast forward to a few months ago, when I was just starting P90X3 (see my results HERE!) and looking over my P90X3 Nutrition Guide. Inside, I was so excited to find an absolutely amazing selection of homemade salad dressing recipes. I’ve been making them all this time and just today for some reason, thought to add fresh chopped basil to the Citrus Vinaigrette recipe from that guide!

I also replaced the olive oil called for in the recipe with grapeseed oil. This dressing is DELISH! I have my mason jar full of luscious dressing sitting in my fridge now, ready to drizzle over all of my salad creations this week. I’ve seriously never been so excited for a salad! Try this – I KNOW you will love it too!
