Stress-Busting Yogurt, Granola & Berry Parfaits
Layers of sweet fruit, creamy yogurt, and crunchy granola make these parfaits healthy enough to serve as breakfast, snack, or lunch but decadent enough to eat for dessert!
We indulge in these parfaits a lot in my house! We all love that they are delicious… I get the added bonus of knowing that they’re LOADED with stress-busting superfoods!
These are also SUPER easy to make. Try the Variations or ‘DIY Parfait Station’ ideas below to make it extra fun for your kiddos (or cater to their picky side!).
Over the past couple of years, my kids have lost their taste for having flaxseeds just sprinkled onto yogurt or oatmeal. Making these parfaits with the seeds ‘camouflaged’ inside crunchy honey granola clusters has turned out to be the perfect solution for us. Try it and let me know how it works for you!

VARIATIONS|
Spiced Pumpkin Parfait
Replace fruit with Spiced Pumpkin Puree:
In a small mixing bowl, combine 2 c. pumpkin puree,
1/2 tsp. cinnamon, and 4 tsp. honey*.
Mix thoroughly, then use in place of the fruit in Step 2 of recipe.
Pina Colada Parfait
In a small mixing bowl, combine 1-1/2 c. crushed pineapple with juice and 1/2 c. shredded coconut.
Mix thoroughly, then use in place of the fruit in Step 2 of recipe.
TIP Set up a DIY parfait station, and older kids can make their own!

SET UP: Make a large bowl of Honey Vanilla Yogurt. Set out yogurt, a bowl of granola and separate bowls of various mashed/diced fruits + individual serving bowls so they can load them up with their own unique parfait creation!

- 2-2/3 c Honey Vanilla Yogurt see instructions below
- 2 c berries (blueberries or combination strawberries & blueberries), fresh or thawed from frozen
- 1-1/2 c Honey Cinnamon Flax Granola see link to recipe below

- Make Honey-Vanilla Yogurt: Combine 2-2/3 c. plain nonfat yogurt**, 3 tbsp. honey*, and 3/4 tsp. vanilla. Mix well. Set aside. (See 'Serving Suggestions for Littles' below for honey & yogurt WARNINGS)
- In each of 4 mini trifle dishes (or short 8 oz. glasses or glass ramekins), layer 1/3 c. yogurt, 2 tbsp. granola, and 1/4 c. fruit. Repeat layers.
- Sprinkle tops with remaining granola, divided evenly between cups.

MAKE AHEAD TIP:
Layer fruit and yogurt only, cover, and refrigerate up to 2 days. Add granola to top when ready to serve.
erving Suggestions for Littles
10-11 months | Replace blueberries with mashed banana, peaches, nectarine, kiwi, mango, pineapple, or pears. *Use granola made without honey - substitute pure maple syrup or apple juice concentrate.
.**Use plain whole milk yogurt for baby's serving - do not add honey. Test for wheat or oat allergy prior to serving granola. Crumble granola into very small pieces and mash or finely dice fruit to avoid choking. |
12-24 months | Blueberries can be used, or replace with diced or mashed cherries or suggestions as noted for 10-11 months.**Use whole milk yogurt for baby's serving. |
