Quick, easy, and fun for everyone – these are great paired with a green salad for lunch or dinner and a great way to satisfy the whole family while cutting some carbs/calories for moms or dads trying to lose a few pounds! The pizza pictured here uses one 6″ whole wheat pita, topped with 1-2 tbsp. sauce, 2 tbsp. shredded cheese (part-skim ricotta would be good added to this), fresh purple basil leaves, fresh rosemary, and diced tomatoes. Other healthy toppings could include diced zucchini, pineapple chunks, sliced mushrooms, sliced olives, diced bell peppers, or grilled chicken. Bake on a cookie sheet at 400 degrees 5-7 minutes or until cheese is bubbly.
For the sauce: Combine one 8-oz. can low-sodium tomato sauce, one 6-oz. can low-sodium tomato paste, 2 tsp. dried Italian seasoning (herb blend), and 1 tsp. garlic (minced or pressed). Freeze leftover sauce in an ice cube tray, dividing into 1-tbsp. portions. Once frozen, place cubes in a freezer bag and label. Now you have convenient pizza sauce that defrosts quickly and easily in the microwave.
