Asian Salmon Chopped Salad


 

One of my favorite ways to help ambitious moms feel more ENERGY and less stress is with FOOD!

I enjoyed this salad the other day with my 7-y/o daughter, and it was SO GOOD! She likes hers without the dressing. I love how easy it is to adapt this to everyone’s liking!

So many parents run themselves ragged in the kitchen, preparing something different for themselves and their children. THAT is stressful and wastes so much time!!!

 

This is a 30-minute dinner (or 5-minute lunch when prepared with leftover salmon!) that we can all eat together!

Instructions
COOK SALMON
  1. Preheat oven or grill to 350 degrees. Rinse fish & pat dry. Cut into 4 serving-size pieces, if necessary. Place fish on large sheet of aluminum foil or parchment paper. Place lemon slices on fish, covering surface. Wrap foil or paper over top of fish and crease edges, to form packet. Place packet on baking sheet if cooking in oven, or place directly onto rack of grill. Cook approx. 20-25 minutes, or until fish is opaque/ dark pink at thickest portion and easily flakes with fork.
MAKE SALAD
  1. Toss cabbage/carrot mixture with dressing. Divide between 4 plates. Top each with equal parts Sesame seeds, almonds, and cashews. Serve each with salmon fillet, or flake fillets and divide fish equally between salads.

Cook double recipe of salmon and use leftovers to make this salad QUICKLY the next day!
